   Also when he wants him to put six he holds out one hand with five fingers and the other with one and he subconsciously puts six behind him, all very cleverly done.

   Derren uses clever methods here, when he wants the guy to put 3 fingers behind his back he makes a little 3 with his hand as if he is drawing it so he subconsciously puts three fingersAs previous viewers have said he puts two fingers out when he wants him to put two fingers.
